Meal Plan #1 – Brown Lentils

Lentils are an amazing food with tons of fiber, protein, vitamins, and minerals. 

I love using lentils in so many recipes, especially those which would typically include ground beef. 

Even if you are not vegan, you should give it a try.  Plus, the cost savings are quite substantial!

Cook 1lb of dried brown lentils, per instructions, leaving excess water in the pot.

Depending on family size and willingness to repeat meals, split finished product accordingly for different uses/mixtures and put in separate containers to refrigerate/freeze in their plain, original cooked state.

Recipe 1:  Lentils and a packet of Taco Seasoning = Use this combination to create a variety of meal options including tacos, burritos, quesadilla, nachos, queso dip, taco salad, etc.

Recipe 2:  Lentils and jarred Marinara Sauce = Use this combination as a topping for pasta, potato, rice, and as an ingredient for an Italian, tomato-based soup.

Recipe 3:  Lentil and vegetable soup = Endless options!  3 versions I make: 

  1. Lentil, carrot, onion, celery, thyme
  2. Lentil, potato, leek, vegan cheese
  3. Chili/bean soup – with a packet of chili spices works very nicely!

Recipe 4:  Lentils and a can of Sloppy Joe mixture = Create with standard directions while replacing ground meat with lentils.
